The quick and dirty is that Karben4 specializes in English-style malt bombs. We are enamored with the myriad of delicate flavors and aromas that malted grains offer. Does this mean that we’ve never been formally introduced to hops? Of course not. It means that we only use malts and hops in synergy. We believe in using ingredients only when they make sense to the overall experience we are trying to share, regardless of style guidelines or popular trends. Above all, we require our brews to be balanced. When you are spending your hard-earned money on a pint you shouldn’t have to fight through a rough spot in the flavor profile to get to the good part. It should all be the good part.
We source the lions share of our menu from local suppliers including Underground Meats, Sprouting Acres Farms, Stalzy’s Deli and UW Provisions to name a few. Our pretzels and pretzel rolls are made in-house on a daily basis in an effort to provide our customers with fresh products.
Additionally we collaborate with Lonely Oak Farm by supplying them with our spent grain/mash that is leftover from our brewing process, which they use as feed to raise their hogs. In turn we purchase whole shoulders from their hogs which we pull ourselves, using the proceeds for our pulled pork open faced sandwich. We’re super excited about this great example of sustainability.
